You do it because he is never getting away from his set when you hit your gutshot... Get your implied odds and then some each and every time you take a screwy draw that is somewhat strong by someone that plays a set that poorly. You also got to let it go when the board pairs, but paying off a reasonable bet isn't so bad in the grand scheme of things.

I think the other point is this play was made vs one of the few decent players at a $50 table at party. The biggest problem with my play here is, according to PT, this was one of the only solid winning players at my table, so my guess is that he isnt going to give me his stack even if I hit my gutshot, not many players are going to call off their whole stack with a 4 card str8 on board. Even if I hit the turn I still have to dodge 9 outs on the river for him to fill up.
