Hey guys, I'm trying to make some decent chicken for my parents... something that's pretty easy, but with a few nice things in there.. y'know what I mean. Thanks guys.

OKay, here is my favorite chicken recipe. Very easy to cook and yet rather impressive.

Chicken Cacciatore

Get out the big frying pan and some olive oil (regular oil will do).
Finely chop up a carrot, a rib of celery and one small onion (Vidalia if you can find it.)
Add chopped garlic if you wish and if you really want to impress get some fresh Rosemary at the grocery store and add some of that.
Sautee that in the oil until the onion looks clear.

Take a package of boneless, skinless chicken breasts and slice across the grain about 1 inch thick. Throw those in the pan along with a can or two of mushrooms (or an 8 oz package of fresh if you are going for more brownie points). Sautee the chicken until it is white all over.

Throw in a can of diced tomatoes, salt and pepper to taste
Add some white wine if you like.
Put the lid on and simmer for 5 minutes.

Serve with rice, mashed potatoes, pasta (Angel Hair is cool) or whatever your family prefers.

The quantities are not critical - use what you have. Hell, the ingredients aren't all that critical. You can add zucchini, bell peppers - I usually just throw in what I have in the pantry. Get creative with it and have fun.

It appears that in my response above I gave my extremely useful culinary advice to the wrong thread. There is obviously no way chicken should be cooked in a microwave for four hours. Three will suffice.

I never thought I'd see the day when the Tightwad moderated (I use that term loosely) Anything goes section would cause me to make mistakes with so many threads dedicated to cooking.
