I have been paying closer attention to the table VP$IP for a couple of days. I seem to do better at tables with lower numbers, hovering around 20%. I played some that were up around 35%, and was continually rivered, hard.

A table that is 21% overall with a couple of 34%-50%ers in it seems more profitable to me than one with 4 or 5 of those juicy 34%ers.

What do you folks look for in a table?

While the VIP number for a table is of some importance I would look more to a table with an overall passive nature. If given the choice of a "good" VIP versus a passive table there isn't any doubt which one I would sit at. Passive folks let you dictate the tempo instead of having to worry about several folks always coming in for raises, whether they are a tight or for that matter a loose player. Passive players are much easier to handle and a greater good to your overall EV in my opinion than most anything else.

When I'm looking for a table, I want PFR to be as low as possible, and I want as many players at that table with Aggression Frequencies under 40%.

Generally, optimal aggression frequencies for winners (according to APerfect10's analysis found ) range between 45-55%, so you want more passive players at your table...
